My Pimped Out Ride

Dont laugh. Due to a series of unfortunate events, I was left with a new set of wheels for the day. Of course it was the day that I was meeting my “city friend” for lunch in Skokie. This casserole is assembled the night before, and then baked fresh in the morning. OR, you can make it several days ahead, freeze, and reheat when needed. It is equally tasty done this way-  and the leftovers are just as delish! If you are like me, on Easter morning you will start your day with a handful of jellybeans, four…
